Nourishing Circulation — Roasted Beet & Citrus Salad for Happy Feet

Our feet carry us through life, but poor circulation (especially in women and those managing diabetes) can cause discomfort, swelling, and long-term issues. This month, let’s show love to our lower half with foods that naturally boost circulation and reduce inflammation.

Recipe: Roasted Beet & Citrus Salad with Walnuts and Arugula

Ingredients:

  • 2 medium beets, roasted and sliced

  • 2 cups arugula

  • 1 orange, segmented

  • 1/4 cup walnuts

  • 1 tbsp olive oil

  • 1 tbsp balsamic vinegar

  • Pinch sea salt and black pepper.

Instructions:

  1. Preheat oven to 400°F. Roast beets (wrapped in foil) for 45 minutes until fork tender. Let cool and peel.

  2. Slice beets and arrange on a plate with arugula and orange segments.

  3. Drizzle olive oil and balsamic vinegar.

  4. Top with walnuts, salt, and pepper. Serve chilled or at room temperature.

  • Calories: ~220

  • Fiber: 6g

  • Healthy fats: 12g

  • Protein: 4g
