Nourishing Circulation — Roasted Beet & Citrus Salad for Happy Feet

Our feet carry us through life, but poor circulation (especially in women and those managing diabetes) can cause discomfort, swelling, and long-term issues. This month, let’s show love to our lower half with foods that naturally boost circulation and reduce inflammation.
Recipe: Roasted Beet & Citrus Salad with Walnuts and Arugula
Ingredients:
2 medium beets, roasted and sliced
2 cups arugula
1 orange, segmented
1/4 cup walnuts
1 tbsp olive oil
1 tbsp balsamic vinegar
Pinch sea salt and black pepper.
Instructions:
Preheat oven to 400°F. Roast beets (wrapped in foil) for 45 minutes until fork tender. Let cool and peel.
Slice beets and arrange on a plate with arugula and orange segments.
Drizzle olive oil and balsamic vinegar.
Top with walnuts, salt, and pepper. Serve chilled or at room temperature.
